Agar
Detailed introduction
Source of Ingredients:
Also known as agar-agar, Haidong choy, jelly powder, agar, gelatin, seaweed extract, agar powder, chilly sky, shredded cabbage, usually extracted and refined from red algae such as rockweed, seaweed of the genus Edelweiss (Lobelia), a kind of polymer hydrophilic polysaccharides, and one of the most widely used seaweed gums in the world.
Product Features:
Agar powder is white to light yellow powder, odourless or slightly odourless, tasteless, sticky and smooth taste, soluble in hot water above 90°C, and starts to solidify when cooling down to 40°, it is a thermoreversible hydrophilic colloid.
Product Specification:
Ordinary agar (soluble in hot water above 95℃) and instant agar (soluble at 65-80℃)
Application in food: According to its physical and chemical properties such as forming complexes with some substances, agar can be used as a thickener, coagulant, suspending agent, emulsifier, preservative and stabiliser. In food, it is widely used in the manufacture of granular orange and all kinds of beverages, jelly, ice cream, pastry, fudge, canned food, meat products, porridge, silver ear bird's nest, soup food, cold food and so on. Agar in the chemical industry, medical research, can be used as culture medium, ointment base and other uses.
